Taro Sago Chia Pudding
You get the taste of taro sago, plus all the fiber of chia pudding.

1. Add water, taro chunks, and sugar to a pot. Cover and bring to a boil over medium heat. Once boiling, continue cooking for 25 minutes, or until the taro is soft throughout when pierced with a chopstick or fork.

2. Remove the pot from the heat. Mix in the coconut milk and chia seeds. Cover and let sit for at least 20 minute, or let cool to room temperature then refrigerate overnight.

3. Serve warm or cold — up to you!
