The other day I was craving taro sago. But I also needed to poop. So I thought I’d kill two birds with one stone by making a taro sago-inspired chia pudding (I felt so smart coming up with that). This is perfect for an on-the-go breakfast, afternoon snack, end-of-day sweet treat, anything.

Instead of sago, we’re using chia seeds. (Don’t worry, this doesn’t change the flavor at all.) And just like taro sago, you can enjoy this either hot or cold — your choice!

Instructions

  1. 1. Add water, taro chunks, and sugar to a pot. Cover and bring to a boil over medium heat. Once boiling, continue cooking for 25 minutes, or until the taro is soft throughout when pierced with a chopstick or fork.
  2. 2. Remove the pot from the heat. Mix in the coconut milk and chia seeds. Cover and let sit for at least 20 minute, or let cool to room temperature then refrigerate overnight.
  3. 3. Serve warm or cold — up to you!
