Cooking the chicken:

  1. Add all the marinade ingredients to the chicken. Let marinate for at least 30 minutes or overnight.

  2. Place the chicken in a single layer in the air fryer basket or tray. Air fry at 375°F for 22-25 minutes, flipping halfway through.

    If using oven: Lay the chicken on a wire rack over a baking sheet. Bake at 400°F for 25-30 minutes, flipping halfway through.
  3. Let the chicken rest for 5 minutes, before cutting into bite sized pieces.

Assembling the bowls:

  1. To a mixing bowl, add the cucumber and tomato, along with olive oil, lemon juice, parsley, salt and pepper to taste. Toss together.

  2. Add the salad greens, rice, chicken, cucumber tomato salad, and other toppings (hummus, tzatziki, pickled red onions, feta, etc.) to your serving bowls.
