Chickpea Thai Green Curry
A higher-fiber take on the iconic Thai green curry, using chickpeas instead of the usual proteins. This dish come together in one pot in 30 minutes or less. With about 10 grams of fiber per serving (not including the rice), it’s cozy, filling, and just as satisfying as the traditional version.

Heat the oil in a large pot over medium-high heat. Add the curry paste and sauté for 2-3 minutes, stirring constantly, until fragrant.

Pour in the broth and coconut milk, then stir in the chickpeas, fish sauce, and sugar. Bring to a simmer, then reduce the heat to medium.
-
Add the eggplant and cook for about 5 minutes, until soft.
-
Add the snow peas, bamboo shoots, and bell pepper. Cook for 2 more minutes.
-
Turn off the heat. Stir in the basil and lime juice, then add salt to taste.
For a more vibrant green color, blend a few extra basil leaves with a splash of water and stir the mixture into the curry. -
Serve with jasmine rice (or brown rice for extra fiber). Enjoy!
