For the scallion lovers.

If you know me, you know I LOVE scallions (a.k.a. gronions). This recipe uses GIANT scallions (also called 大葱, daepa, or negi). This is a specific green onion variety that can be found at Asian supermarkets. If you can’t find it, regular scallions work too!

This dish takes one pan and under 30 minutes. The tofu is braised in a savory soy sauce with lots and lots of scallions, which cook down until soft and mildly sweet. This seasons the tofu all the way through and leaves it with a beautiful, glossy glaze.

Serve it over steamed rice, which soaks up the sauce and balances all that flavor.

Scallion Braised Tofu

Soy braised tofu with lots and lots of aromatic scallion. It's savory, umami, saucy, and most importantly, NOT BLAND!!! This dish goes incredibly well with rice, as it soaks up all that flavor.

Instructions

  1. Using your hands, break the tofu into large, roughly triangular chunks. Pat the outside dry with a paper towel.
  2. In a small bowl, combine the soy sauce, dark soy sauce, oyster sauce, cornstarch, salt, pepper, and water until smooth.
  3. Heat the oil in a wok or large pan over high heat. Add the tofu and pan-fry without moving it, until the bottom is golden brown, 3-5 minutes. Flip and cook the other side until golden brown.
  4. Gently push the tofu to one side of the pan. Add the garlic and the white part of the scallions, and sauté until fragrant, about 1 minute.
  5. Reduce the heat to medium-high. Give the sauce a quick stir, then pour it in and stir gently. Simmer until the sauce has mostly reduced, 8-10 minutes.
  6. Stir in the green part of the scallions and cook just until wilted, 1-2 minutes. Taste and add more salt if needed.
  7. Serve over steamed rice. Enjoy!
