Overnight oats:

  1. In a bowl, combine oats, chia seeds, coconut milk, milk of choice, yogurt, sweetener, and salt. Cover and refrigerate for at least 8 hours or overnight.

Salted coconut sauce:

  1. In a small, microwave-safe bowl, combine the corn starch and water until dissolved. Mix in the coconut milk and salt.
  2. Microwave for 1 minute, stirring every 20 seconds.

Assembly:

  1. Stand the mango upright on a cutting board and slice along the center pit. Repeat with the other side. Use a large spoon to scoop the flesh from the skin. Slice into strips.
  2. Place the overnight oats in a serving bowl, along with the sliced mango and salted coconut sauce. Optionally, garnish with sesame seeds.
