Soy Glazed Enoki Mushroom

Cut the enoki mushroom close to the base, discarding the stem cluster (where the mushrooms are bound together). Slice horizontally through the bottom to create 2–3 flat "steaks"
You'll want to cut very close to the base so the mushrooms stay together! -
Meanwhile, in a small bowl, combine the dark soy sauce, mirin, sugar, corn starch, and water.

Heat the oil in a pan over medium-high heat. Add the enoki and sear until golden-brown on the bottom. Flip and sear the other side until golden-brown.

Reduce the heat to medium. Pour in the sauce and simmer, spooning the sauce over the enoki to coat the top.

Serve over a bed of rice, and garnish with furikake and chopped scallions!
